"Bolormaa" is a brut nature classic white method produced from Malvasia Aromatica di Candia grapes, giving a distinctive floral bouquet and citrus notes on the nose. Straw yellow in color, this Emilia IGP sparkling wine stands out for its persistent and delicate mousse. In the mouth it is fresh and savory, perfect to accompany traditional Reggio Emilia dishes such as fresh and stuffed pasta, Parmigiano-Reggiano, gnocco fritto and cured meats, but also excellent as an aperitif. Vinification involves whole cluster soft pressing and spontaneous fermentation on its own yeasts, with clarification only by racking and no filtration. The first fermentation takes place in stainless steel, while the second and aging takes place in the bottle for a full 20 months, before disgorgement pas dosè. It is recommended to serve at 10°C to fully enjoy its characteristics.
