Maturing over 24 months. Branded and guaranteed by CFPR. Straw-yellow color, with sunny yellow hues; rich in tyrosine crystals, easily identifiable on the palate and indicative of good seasoning. Our Parmigiano Reggiano aged over 24 months has an optimal degree of ripeness to be enjoyed in any preparation. The dough is crumbly and grainy. It possesses a perfect balance between sweet and salty, highly digestible; it can be used in all culinary preparations and can also be enjoyed grated on pasta dishes. On its own, as a snack, accompanied simply by bread or served with cold cuts, with jam or with fruit. To enrich dishes: grated or flaked into petals, it adds flavor and aroma to pasta, risotto, soups, as well as to side dishes, vegetables, and fresh salads. As an ingredient in the preparations of stuffed pastas, savory pies and in many other recipes of the Italian culinary tradition. The long aging allows this particular type of Parmigiano Reggiano to be paired with red, more structured wines typical of its area of origin, such as Lambrusco. It is sublime paired with a sliver of aged Parmigiano Reggiano enriched with a few drops of Traditional Balsamic Vinegar of Reggio Emilia.
